GLOSSARY OF TERMS

Abbey - Imitating the Trappist style

Ale - Brew made with top-fermenting yeast that can impart a distinctive fruitiness

Berliner Weisse - Classic Berlin style wheat beer with quenching tartness and high carbonation

Dubbel - Belgian term, an extra strong beer, brewed using dark candi syrup

Framboise - Raspberry beer, usually based on lambic

Gose - Tart wheat beer brewed with salt & coriander

Gueuze - Blend of young and old lambic beers

Russian Imperial Stout - Strong stout brewed in London during  the 18th century for export to the court of Catherine II of Russia

Lager - German word for “stored” – any beer made by bottom fermentation

Lambic - Belgian spontaneously fermenting wheat beer – often the base of classic fruit beers

Porter - Lighter bodied companion to stout

Quad - Belgian term, a beer of great strength and bolder flavor than Dubbel and Tripel 

Rauchbier - Dark, bottom fermented beer that uses smoked malts

Saison - Refreshing summer style from French-speaking Belgium

Sour - A brew that includes wild yeasts, often imparting pleasantly tart notes

Stout - Extra dark top fermenting brew made with roasted malts

Trappist - This order of monks has six breweries in Belgium, two in the Netherlands, one in Austria, one in Italy, one in France and one in the United States brewing strong top fermented beers using candi sugar or honey in the kettle

Tripel - Belgian term applied to the strongest beer in the house, brewed using light candi syrup

Weisse/Weissebier - German term for “white” – a pale brew made from wheat
